Ingredients
Cookies
4cupsbrown sugar
1 1/2 cupsoftened butter
4eggs
1cupraisins
1 tsp.salt
4cupsquick oats
2tsp.cinnamon
2tspbaking powder
4tspbaking soda
6tbsp.hot water
5 1/2cupsall purpose flour
Icing
8 oz.cream cheese
14oz.marshmallow cream
5 1/2 cupspowdered sugar
Instructions
Cookies
Cream brown sugar and butter.
Puree eggs and raisins and add to sugar/butter mixture. Mix well.
Add salt, oats, cinnamon, and baking powder and mix again.
Mix baking soda with hot water. blend it into your cookie mixture.
Add flour slowly until well incorporated.
Bake cookies at 350 degrees for 10 minutes, or take them out just before they start browning.
Icing
Cream the cream cheese till smooth and add the rest of ingredients. Mix well.
Ice the bottom of one cookie and then add another cookie on top to make a whoopie pie! Enjoy!
Notes
The butter can be substituted for shortening if you would like!When making the icing, make sure the cream cheese is room temperature.If the icing is too runny, you can add more powdered sugar.Another substitution for icing is that you could use just plain marshmallow cream for in-between the cookies.
