Irresistible Oatmeal Cream Pie Recipe

These oatmeal cream pies melt in your mouth! They are so soft, chewy, sweet, and irresistible. The resemblance is of the Little Debbie, oatmeal, cream pies, and like them, get a sweet layer of marshmallow cream icing.

I work at a greenhouse and occasionally help my boss with her housework and baking! Here recently, she got me to make some oatmeal cream pies for their family, and I told myself that I’m gonna go home and make these for my family! They were absolutely amazing and they reminded me so much of Little Debbie Oatmeal Cream Pies. I couldn’t help but sneak a couple of bites while I was making them because they smelled divine, and looked delicious!

I wasn’t completely satisfied with the recipe, though, so I came up with a recipe similar to hers! Today I’m so excited to share it with y’all!

This is definitely no diet food! It’s one of those treats you just make every once in a while when you are craving something sweet haha…

These oatmeal cream pies have hints of cinnamon and brown sugar in them and are packed with oatmeal! Then to top it off, they get a marshmallow cream icing in-between two cookies to make it a whoopie pie.

How to make Oatmeal Cream Pies:

Step 1: Mix butter and sugar in a kitchen mixer. Do this until it’s creamy!

Step 2: Puree eggs and raisins in a blender and mix in with the butter/sugar mixture.

Step 3: Add salt, oats, cinnamon, and baking powder while the mixer is going.

Step 4: Mix soda with hot water and add to the rest of mixture. Blend well.

Step 5: Slowly add the flour and mix until well incorporated.

Step 6: Form and bake cookies! You will want your cookie to be flat so after you drop the dough on your sheets, take your hand and flatten them a bit before baking them!

Step 7: Bake your cookies at 350 degrees for 10 minutes. I always bake my cookies for 5 minutes on the lower shelf and 5 minutes on the one above it! It bakes the cookies more evenly. Be sure to not overbake these! Take the cookies out just before they start browning! Let them cool for a minute or two before removing them from off the pan.

How to make icing for Oatmeal Cream Pies:

Now it’s time to make icing for your cookies! Beat the cream cheese until smooth. Next add the marshmallow cream and powdered sugar. Once it smooth, you can transfer it to another bowl and ice your cookies! To ice them, I like using a small cookie scoop of icing for in-between the cookies. It doesn’t take much at all since these cookies are very sweet!

Tips:

  • The butter can be substituted for shortening if you would like!
  • When making the icing, make sure the cream cheese is room temperature.
  • If the icing is too runny, you can add more powdered sugar.
  • Another substitution for icing is that you could use just plain marshmallow cream for in-between the cookies.

Little Debbie Oatmeal Whoopie Pies

Ingredients

Cookies

  • 4 cups brown sugar
  • 1 1/2 cup softened butter
  • 4 eggs
  • 1 cup raisins
  • 1 tsp. salt
  • 4 cups quick oats
  • 2 tsp. cinnamon
  • 2 tsp baking powder
  • 4 tsp baking soda
  • 6 tbsp. hot water
  • 5 1/2 cups all purpose flour

Icing

  • 8 oz. cream cheese
  • 14 oz. marshmallow cream
  • 5 1/2 cups powdered sugar

Instructions

Cookies

  • Cream brown sugar and butter.
  • Puree eggs and raisins and add to sugar/butter mixture. Mix well.
  • Add salt, oats, cinnamon, and baking powder and mix again.
  • Mix baking soda with hot water. blend it into your cookie mixture.
  • Add flour slowly until well incorporated.
  • Bake cookies at 350 degrees for 10 minutes, or take them out just before they start browning.

Icing

  • Cream the cream cheese till smooth and add the rest of ingredients. Mix well.
  • Ice the bottom of one cookie and then add another cookie on top to make a whoopie pie! Enjoy!
