Mini Chocolate Cake Recipe

This mini chocolate cake recipe is divine! Top it with the chocolate espresso buttercream and you’re gonna be hooked. Its a rich dessert that will be a highlight of a valentines dinner, or can also be used for smash cakes and parties!

Now I’m a chocolate lover and will never turn down cake! Also, did I mention that I absolutely love coffee? So this combination of espresso and chocolate hit the spot.

I made these cakes with Valentines Day in mind! If you are looking for a dessert that is cute, but doesn’t take too much effort, this one is for you!

The cake is rich with chocolate and the buttercream absolutely tops it off!

First off, these darling little cakes don’t take a special pan to make them in at all! Actually, I used a cookie sheet to make the cake layers! Here in a little I will explain how I do it.

How to make this mini chocolate cake recipe:

Step 1: So first off, you will want a white or yellow cake mix. Pour it into a bowl.

Step 2: Add to the cake mix the sourcream, eggs, vegetable oil, and water. Mix until well incorporated.

Step 3: Add the cocoa powder. One cup will give the cake a rich chocolate flavor so if you prefer not so dark, you could go easy on the cocoa!

Step 4: Pour the cake batter into a cookie sheet and bake it. I like using cake strips so the cake stays flat. Here is a DIY method that shows you how to make them.

Bake the cake for about 20-25 minutes, or until you can insert a toothpick in the center of it and it comes out clean!

Wait till the cake cools and find yourself a round cutter of some kind! Hopefully you have a round cookie cutter, or something like it! In my case here, I only had this round meat chopper, but it worked quite nicely!

If you used a cookie sheet to bake your cake in, there should be enough for 5 mini three layered cakes.

How to make chocolate espresso buttercream for the cake:

First off, you will want to take your softened butter and whip it up till it is soft and creamy. If you forgot to take your butter out ahead of time, you can put the butter in the microwave with the wrap still on, and microwave it for about 10 seconds. Its doesn’t take long at all so be sure to check it often!

Next add the powdered sugar. Mix the butter and sugar until it all comes together.

Now add the cocoa and the espresso. Make sure the espresso is cool before adding it!

To get the perfect consistency, you will want to add some heavy whipping cream!

Assembling the cake:

If the layers are not even, you can even them with a sharp knife.

For the drizzle, I melted a chocolate block, and just used a spoon and drizzled it along the edges! Then to finish it off, put a swirl of buttercream on top yet!

Dust the cake and the plate with powdered sugar and garnish with fruit to add a finishing touch! Serve with ice-cream and strawberries!

Ingredients

Cake

  • 1 pkg. white cake mix
  • 1 cup sour cream
  • 3 eggs
  • 1/2 cup vegetable oil
  • 1 cup cocoa powder
  • 1/2 cup water

Chocolate Espresso Icing

  • 1/2 cup butter
  • 2 1/2 cups powdered sugar
  • 4 tbsp. cocoa powder
  • 1 tbsp. espresso scant
  • 2 tbsp. heavy whipping cream

Instructions

Chocolate Cake

  • In a mixing bowl, combine cake mix, sourcream, eggs oil, and water. Beat on medium speed for 1 minute. Add cocoa and mix for another minute.
  • Bake at 350 degrees on a oiled baking sheet for 20-25 minutes, or until you can stick a toothpick in the center and it comes out clean. Let it cool completely.
  • Once it is cool, cut out 15 circles with a round cookie cutter. Frost in-between the layers, and sprinkle powdered sugar over it. Garnish with fresh fruit! Serve!

Chocolate Espresso Buttercream

  • Whip softened butter till creamy. Add the powdered sugar and mix till it comes together.
  • Next add the cocoa and espresso. (Do not add espresso until it is completely cooled off!)
  • Add heavy whipping cream until it's the right consistency.
