This granola recipe is for those of us peanut butter, granola lovers that prefer a healthy option! Its the perfect combination of sweet and salty and is the perfect breakfast to have!
This granola recipe is for those of us that love peanut butter yet like to keep it healthy! It is very easy to make and only takes a few minutes to throw it together and toast it! A delicious breakfast or snack!
Growing up, my mom always kept granola on hand for us to eat! She made the absolute best and we all loved it! I guess I’m a bit of a health nut, and so just recently, I wanted a more healthy version of it. So I tried to mimic Mom’s recipe as close as possible with this recipe! It’s for sure not the same but it does taste similar! (Some day, I will share her recipe with y’all!)
I literally cant help myself with this granola, as soon as it comes out of the oven I snack on it! I had to remind myself to save some for pictures yet haha!
Healthy Granola Ingredients:
Rolled Oats
For this recipe I used the Old Fashioned Quaker Oats. Its a good source of fiber and keeps you full for a long time!
Nuts
I used chopped Pecans to make this batch. Other options include slivered almonds, walnuts, pepitas, peanuts, cashews, pistachios, and macadamia nuts.
Chia Seeds
I throw chia seeds into a lot of my food just cause I know its good for me! They are high in Fiber and protein and are loaded with antioxidants!
Flaked Coconut (opt.)
I personally don’t add flaked coconut because I’m not fond of it, but I know a lot of people do like it in granola so I thought i would throw that in here!
Monk Fruit Sweetner (opt.)
This is an optional ingredient in this recipe, but I do like to use it to give the granola that extra sweetness! I just buy the BBF monk fruit blend at walmart..
Salt
Yes please!! Don’t miss this ingredient, I love the sweet and salty together in this recipe!
Oil
For this recipe I use butter, but you can very well substitute it for coconut or almond oil.
Peanut Butter
I make my own homemade all natural peanut butter for this recipe! Its so simple to make, and I won’t ever go back to buying it. Be sure and check it out! You can also just use all natural peanut butter that you can buy at Kroger or Walmart. My personal favorite to buy is the MaraNatha brand which is very affordable!
Flavoring
The best flavoring for this recipe in my opinion is the maple flavoring, but if you prefer you can also use vanilla flavoring!
What to eat this granola with:
I love eating this granola with milk and frozen blueberries! You can add it to your Yogurt parfaits, or smoothie bowls! Its great to snack on just plain too!
Can you store homemade granola?
Yes you can! Store this healthy granola recipe in an airtight container for up to 2 weeks! It can also be frozen in an airtight container for up to 3 months..
Crunchy or not crunchy Granola?
So unlike a lot of people, I don’t like my granola crunchy! So if you want your granola crunchy, bake it longer then what the recipe calls for!
Healthy Peanut Butter Granola
Ingredients
- 2 cups Rolled Oats
- 3/4 cup Pecans
- 1 tbsp. Chia Seeds
- 1/4 tsp Salt
- 1/2 cup Flaked Coconut optional
- 1 tbsp. Monk Fruit Sweetener optional
- 1/4 cup Butter or Coconut Oil
- 1/2 cup Peanut Butter
- 1/4 cup Honey
- 1 tbsp. Maple Syrup
- 1/4 tsp. Maple or Vanilla flavoring
Instructions
- Start by mixing the dry ingredients together and set aside.
- Now combine the peanut butter, butter, maple syrup, and honey in a microwavable container. Set in the microwave and heat it up till the butter is melted. Mix everything together until smooth! You can also do this step on the stovetop if you prefer. Add the flavoring after this step.
- Now pour the butter mixture over the dry ingredients and stir it together until it is well combined and there are no dry bits.
- Transfer the granola to a baking sheet and press it down with a spoon or your hands.
- Set in the preheated oven and bake for an hour. If you like your granola crunchy, bake longer then an hour.
- Let it cool before taking it off the sheet! Enjoy with parfaits, smoothie bowls, or just plain!
